Super Soft Homemade Brioche Buns

1. What You’ll Need

Dry Ingredients:
– 500 g flour
– 80 g sugar
– Pinch of salt
– 20 g fresh yeast (or 7 g dry yeast)

Wet Ingredients:
– 250 ml warm milk
– 2 eggs
– 80 g softened butter

For brushing:
– 1 egg yolk
– 1 tbsp milk

2. Instructions

Step 1: Activate the Yeast
– Mix yeast with the warm milk and let it sit for 10 minutes until it foams.

Step 2: Make the Dough
– In a large bowl, mix flour, sugar, salt, eggs, and the yeast mixture. Knead until smooth.

Step 3: Add the Butter
– Add the softened butter and knead for another 10 minutes until the dough becomes elastic.

Step 4: First Rise
– Cover the bowl and let the dough rise in a warm place for 1.5 hours.

Step 5: Shape the Buns
– Punch down the dough, divide into 8 equal parts, and shape into buns.

Step 6: Second Rise
– Place buns on a baking sheet and let them rise for another 30 minutes.

Step 7: Bake
– Brush with the egg yolk-milk mix and bake at 180°C (350°F) for 15–20 minutes or until golden brown.
