This surprising sweet potato cake — yes, made with actual potatoes — is moist, flavorful, and incredibly easy to make.

300 g (about 1 ¼ cups) cooked potatoes, mashed
150 g (¾ cup) sugar
100 g (½ cup) melted butter
3 eggs
100 g (¾ cup) all-purpose flour
1 packet of baking powder (approx. 1 tsp)
Optional flavoring: vanilla extract or lemon zest
a. Mix the base ingredients
In a bowl, mash the cooked potatoes until smooth.
Add sugar and melted butter, and mix well until creamy.
b. Add eggs and dry ingredients
Beat in the eggs one at a time. Then, add the flour, baking powder, and your choice of vanilla or lemon zest.
c. Bake
Pour the batter into a greased or lined cake tin.
Bake at 180°C (350°F) for around 35 minutes.
The cake should be golden and soft when done.
This cake is perfect for brunch, dessert, or even an afternoon snack.
