3 eggs
¾ cup sugar (150 g)
1 ¼ cups all-purpose flour (150 g)
1 packet baking powder (about 2 tsp)
½ cup melted butter (100 g)
1 packet vanilla sugar or 1 tsp vanilla extract
A pinch of salt
1. Preheat your oven to 350°F / 180°C.
2. In a large bowl, beat the eggs with the sugar and vanilla until pale and slightly frothy.
3. Stir in the melted butter, then add the flour, baking powder, and salt. Mix just until smooth — don’t overbeat.
4. Pour the batter into a buttered and floured cake pan.
5. Bake for 30 to 35 minutes, or until a toothpick comes out clean.
6. Let cool for 10 minutes before removing from the pan. Enjoy warm or room temp!
